Tasty Tuesday!!

Tasty Tuesday - Mexican Rice to go with last weeks Enchilada's

Here is what you'll need:
2 packs Sazon Goya

1 1/2 cup long grain rice

3 or 4 cloves garlic, finely chopped

1/3 onion finely chopped

3 cups chicken broth

2 tablespoons oil

1/2 cup frozen peas

Juice of lime
 
Soak rice in a bowl of hot water for 15 minutes. Drain and rinse in a strainer until the water runs clear. Let the rice continue to drain for 10 minutes.

Heat oil in heavy skillet. When hot, add the rice, stirring until the rice starts to become a golden color. Add the chopped onion and continue frying until the onion is clear and the rice a golden brown. Add chopped garlic and cook one minute longer. Add the chicken broth and 1 package of the Sazon powder and the peas. 
Let come to a full simmer, and then turn down to low, cover and let cook until all the liquid is absorbed. (about 20 minutes) Do not stir. Right before the liquid is absorbed, add the last package of anchiote and the lime juice. Stir briefly. 

Remove from burner and let stand a five minutes before serving.

Easy, Chewy Granola Bar Recipe

A simple & healthier snack option for kids & grown ups!

Easy, Chewy Granola Bars

  1/3 Cup Margarine

10 oz. Mini-Marshmallows

4 Cups Rice Krispy Cereal

2 Cups Quick Oats

Optional – raisins, dried cranberries,  chocolate chips

 

Directions

1. Melt margarine & marshmallows over low heat until melted.

2. Remove from heat & add Rice Krispies cereal & oats.

3. Add any desired fruits – such as raisins

4. Spread in a 9x13” pan – greased with margarine, use waxed paper to pat down without sticking.

5. Sprinkle chocolate chips on top (I prefer the mini-chocolate chips). Allow to cool & cut into serving size pieces.

Makes about 24 servings / 105 Calories each – unless fruit or chocolate is added.  This is a quick, low cost snack with fiber!

We have Caleb’s artwork ALL over our house. Some are displayed & some are just laying around. One day I asked Caleb to pick his favorites & we would find a way to put them in his new room. 

So I took the jute-string & hung a line above his bed. Then I attached his favorites artwork with a clothespin. He was so excited & so proud of it! And at the rate he’s going, I’m going to have to find a place to hang another line soon…maybe between his windows. Yep, definitely going to have to do that soon.

Weekend Craft

Looking for a super simple yet fun craft this weekend?

I absolutely LUV these necklaces!  They are so simple to make and for someone with nickel or metal sensitivity they're perfect!  Also a great way to re-use/re-cycle an old t-shirt!
All you need is an old t-shirt and a pair of scissors!
Lay the shirt flat and cut strips (I cut them about 1/2 in wide).
 Stretch each strip out as far as you can (it will naturally form a yarn like rope).  For a thicker necklace cut more strips (for a bracelet I use 3 strips - 2 for the bracelet and one for the knot)

Continue to wrap the knot rope over the bracelet/necklace until you only have a small piece left - then tuck the ends under the loops you have just made to secure your knot.

 There are lots of options for this necklace!  This pink one I braided some of my ropes and added them in.  I also made a t-shirt swirl flower with rhinestones and sewed it onto the necklace knot.
 This one is a simple pink necklace that I clipped one of my  homemade leather flowers onto (hair clip flower fit perfectly into the knots!
 This one was made from a green tie dye t-shirt.
The possibilities are endless!!

This week Caleb picked out his backpack for preschool. I surprised him by filling it with fun school things like colored pencils, paper, stickers…ya know, fun stuff that preschoolers really don’t need,  He was PUMPED about the goodies & drew me this picture – it’s a dinosaur with a hat on, but I think it looks like Donkey from Shrek. Yes, my 4 year old is an amazing artist. I know this. I’m not bragging. It’s a fact!

Looks like Caleb is Mr. Popular this Insta-friday!  He had to have his 1st filling done this week. He was a champ! His dentist is pretty awesome though so that helps a ton! He’s like a real life Goofy Smile
